Abstract
An ergonomic poultry knife has an elongated handle having a longitudinal axis an upper surface, and a lower surface in a plane about parallel to the longitudinal axis, a blade receiving distal end, and a depending wall about perpendicular to the longitudinal axis to engage the upper surface of the index finger and wherein the wall is substantially more distant from the distal end than the recess, and a blade upper edge adjacent the distal end disposed about 1.degree. to 6.degree. downwardly with respect to the longitudinal axis.
