The invention relates to a procedure for preparing a food additive, in which a brewing yeast raw material containing oligosaccharides and/or polysaccharides is filtered and treated hydrolytically so that the cell wall structure is opened. Furthermore, the invention relates to a food additive prepared by hydrolytically treating a filtered brewing yeast raw material containing oligosaccharides and/or polysaccharides so that the cell structure is opened. Moreover, the invention relates to the use of the food additive in question for the prevention of gastric disorders and intestinal diseases, and to a preparation containing such additive.
