Induction kettles for cooking food, such as corn kernels to make popcorn, and associated systems and methods, are disclosed herein. In some embodiments, an induction kettle can include (i) a kettle bottom, (ii) an induction assembly including an induction coil, and (iii) a spacer coupling the kettle bottom to the induction assembly. A power supply can supply power to the induction coil for inductively heating the kettle bottom. During heating, the spacer can maintain a fixed separation distance between the kettle bottom and the induction assembly when the kettle bottom deflects (e.g., dishes upward or downward) due to thermal expansion. For example, the spacer can press against and deflect the induction assembly to deflect the induction coil to match the deflection of the kettle bottom.
