Object is to mass-produce a sweetener containing D-allulose and having a sweetness degree and taste quality very close to those of sugar at a world scale and at a low cost with price competitiveness. Provided is a mass-production method of a sweetener having functionality of D-allulose and a taste quality close to that of sugar, including acting D-allulose 3-epimerase on a D-glucose- and D-fructose-containing inexpensive composition used as a raw material, allowing isomerization of D-fructose in the raw material to proceed by an isomerization reaction between D-fructose and rare sugar D-allulose, terminating the reaction at the stage when a rare sugar D-allulose content reaches an intended content of an intended product, and thus obtaining an intended product composed of rare sugar D-allulose, D-glucose, and D-fructose, in which the D-fructose content is in a range that compensates for a weak point of D-allulose in sweetness degree and gives a taste quality close to that of sugar in cooperation with D-allulose and D-glucose.
