Abstract
Cooking machine or deep-fat fryer comprising a vessel for holding a bath of water or frying oil, said vessel being formed by a cylindrical vertical wall or by at least a vertical planar wall, means for controllably heating said bath, a perforated basket adapted to be dipped into said vessel, wherein the heating means comprise at least an induction coil provided on the outside of a vertical wall of said vessel and oriented so that the axis of the electromagnetic flux generated by said coil is directed at the interior of said basket in a substantially horizontal direction, and an appropriate electric-frequency driver generator adapted to generate an electric voltage that is transmitted to said induction coil; said perforated basket is made of a ferromagnetic material.At least the portion of the wall that faces said induction coil is made of a heat-resistant and diamagnetic material, such as preferably glass-ceramics.
