The invention relates to a system for packaging minimally processed fresh vegetable products, according to which the application products are covered with a laminar wrapping provided with a certain permeability to gases, inside which the products are housed immersed in a modified atmosphere formed by nitrogen (N.sub.2), carbon dioxide (CO.sub.2) and oxygen (O.sub.2).
