The present invention aims at providing, in a retort pouch food containing a meat alone, or together with other food materials, a meat quality-improving agent, which is added to a raw material meat, in order to inhibit deterioration in the texture of meat subjected to retort sterilization, and a meat quality-improving agent which comprises oil-processed starch containing oil and glycerol organic acid fatty acid esters; and a curdlan powder with an average particle size of 0.05 to 50 .mu.m.
